MEATBALL PASTA WITH CREAM RECIPE
COOKING TIME : 20 Min.
PREPARATION : 15 Min.
FOR HOW MANY PERSON : 6-8
DIFFICULTY : Hard
CONTENTS :
1 package of baked pasta
4 bunches of tomatoes
1 onion
5 cloves of garlic
1.5 cans of tomato puree (300 ml)
1 teaspoon salt
1 teaspoon paprika
1 teaspoon of black pepper
2 tablespoons of olive oil
For the meatballs:
400 gr double shot ground beef brisket
1 onion
15 sprigs of parsley
100 g string cheese (1 knuckle)
75 g cream (2 tablespoons)
5 tablespoons of breadcrumbs
1 pack of baking soda
1 teaspoon of cumin
1 teaspoon salt
1 teaspoon of black pepper
1 tablespoon of olive oil
* To make Meatball Pasta with Cream, put a wide and large, preferably cast iron pot on the stove, turn on the bottom and start heating.
*Add 2 tablespoons of olive oil in it.
*Cut 4 whole bunches of tomatoes, cut 1 onion in half and put 5 cloves of garlic whole in the pot and start roasting.
*Be sure to pay attention to the garlic, it is necessary to remove them a little earlier than tomatoes and peppers.
*When the tomatoes soften and start to leave their skins, remove them from the pan when the onions are roasted.
*Run the food processor by adding the roasted and peeled tomatoes, onions, garlic and 1 teaspoon of salt in the pan.
*Grate 1 onion into 400 gr veal brisket and ground beef.
*Add 1 packet of baking soda, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 level teaspoon of cumin, 5 tablespoons of breadcrumbs and 15 sprigs of finely chopped parsley and knead for 5-6 minutes. After kneading, let the minced meat rest for at least half an hour if possible.
*Cut 100 g (1 knuckle) of string cheese into small cubes and mix with 2 tablespoons of cream.
*Make walnut-sized balls from the minced meat and punch a hole in the middle with your finger. If you wet your hands while shaping, you can do it without sticking. Add the creamy mixture into the meatballs and close, roll it with your palm without pressing too much so that the place you closed does not open.
*Turn the heat on again and add 1 tablespoon of olive oil.
*After warming up, place the meatballs and fry them.
*Boil 1 packet of baked pasta 1-1.5 minutes less than the time indicated on it. Boiling time is written on the package as 7 minutes, but since I will cook it in the pan for a while, 5 and a half minutes will be enough.
*Take the fried meatballs out of the pan.
*After removing the meatballs from the pan, add the sauce you made in the food processor to the pan and boil it for a while.
*Add 300 ml (1.5 cans) of tomato puree, one teaspoon each of black pepper and chili flakes into the pan.
*Add the slightly firm pasta into the sauce in the pan. Be sure to add plenty of boiling water.
*Finally, add the meatballs to the pasta, spread them evenly and sprinkle fresh parsley leaves, and your Meatball Pasta with Cream is ready.
